Remember that single-serve gingerbread pancake I made a while ago? I decided it would be fun to apply the concept of a single-serve pancake to make a stuffed pancake.
This turned out great! I love foods that are stuffed because they have a fun surprise inside that contrasts with the outer texture. Filled with strawberry cream cheese and real strawberry pieces, and slathered with blueberry jam, this pancake was amazing!
I used Laughing Cow strawberry cream cheese for the filling, but it wouldn’t be my first choice. It tasted okay, but it wasn’t quite sweet enough for my taste. So next time I might try a different type of cream cheese.
Strawberry Cream Cheese Stuffed Single Serve Pancake
for pancake batter:
- 1/4 cup flour (yes, I used all-purpose for this)
- 1 tsp brown sugar
- 1/2 tsp baking powder
- 1 tsp Egg Beaters egg substitute (or 1 tsp egg)
- 1/4 cup milk
- a pinch of cinnamon
- 1 small strawberry, washed and diced
- 1 Laughing Cow strawberry cream cheese triangle
- about 1 tbsp St. Dalfour’s blueberry jam
Combine batter ingredients in a small bowl. Spray a pan with cooking spray and turn it on to medium heat. Put about half the batter on the pan.
Use a butter knife to chop the cheese triangle to pieces and place the pieces on top of the pancake batter. Add the diced strawberry.
Pour remaining pancake batter over the filling, covering it. When pancake looks bubbly, flip and cook the other side. Since the pancake has three layers it will take a few minutes to cook completely.
Remove pan from heat. Place finished pancake on a plate and top with the heaven of St. Dalfour’s blueberry jam. Bon appetite!
