Two New Lunch Ideas: Savory & Sweet

Last week I did a series of posts on some make-ahead, take-along lunches that were more interesting than the old, worn-out peanut butter and jelly or cheese sandwich. My posts were called “Lunch Liberation!” because the lunches I made that week were supposed to liberate me from my personal prison of the constant cheese sandwich. All the posts I did were sandwiches, wraps, and so on, but they were still much more interesting to me than anything I’d been eating as a school lunch in the past. Someday, when I get more ambitious, I hope to bring something non-sandwich altogether, such as a salad. But for now, I just make sandwiches, and try to make something different every day. Here are two of my lunch recipes from this week: one savory, one sweet.

Savory: Pizza Pita

Makes two pitas

A healthy alternative to the greasy, questionably fresh pizza sold at most schools. This combo works great on sandwich bread, so I decided to try it in a pita. As expected, the result was just as delicious!


  • 2 whole wheat pita pockets
  • 1/4 cup or a little less marinara sauce
  • 2 slices Colby-Pepper Jack cheese
  • 4 lower salt, pimento stuffed Manzanilla olives, each chopped in half

Directions: Assemble all ingredients. Spread the marinara sauce inside each of the pita pockets. Rip the cheese slices in half on the diagonal and stuff them into the pita. Add the halved olives, four halves in each pita. (If you want more olives, go for it! But this was plenty olive-y for my taste.)

Wrap in foil and chill in fridge until ready to take to school or work or wherever!

Sweet: Pumpkin White Chocolate Peanut Butter ‘Wich

Makes one sandwich

Though it is now March, the flavors of fall still call to me. This sandwich combo, inspired by Autumn desserts, is indulgent-tasting and healthy at the same time!


  • 2 slices whole wheat bread
  • 2 tbls Peanut Butter & Co. White Chocolate Wonderful peanut butter blend
  • 2 tbls pumpkin butter

Directions: Spread peanut butter on one piece of bread, pumpkin butter on the other. Then slap them together for an eternal bondage that is super yummy!
