This smoothie is truly a miracle from a tropical dream. In the dead of winter, when we all long for warm beaches, sunny skies, and a coconut filled with some cool, fruity liquid, the taste of this smoothie can surely bring that image into our lives. At least, for the short time it takes to slurp it all up!
I was thoroughly satisfied with this smoothie. The texture was as delightfully thick and creamy, the flavors of peach, mango and pineapple blended beautifully, and the chocolate, coconut, and pistachio I added for fun contributed a varied texture and more interesting flavor. This smoothie is a great source of calcium, protein, and delivers multiple servings of fruit. I just recently discovered pistachios, and I must say they are both tasty and nutritious: a 1/4 cup (shelled) serving is a good source of thiamin, phosphorus, magnesium, and copper, and contains no cholesterol. Furthermore, some studies suggest that eating pistachios can help lower the risk of heart disease, and the nourishing nuts are high in lutein, a nutrient that promotes skin health and good eyesight. It’s good pistachios are so healthy, because now that I’ve tasted them I’m hooked and will have to try adding them to loads of new recipes!
Anyway, back to our delectable tropical smoothie. Here’s the recipe; blend it up anytime you’re sick of gray skies and want to enjoy some tropical flavor while still getting maximum health benefits from your food!
Peachy Cream Pistachio Dream Smoothie
for the smoothie
- 1 banana
- 1/4 of a large mango, cut into several smaller pieces
- 1/2 cup milk
- 1 Weight Watchers brand Peach Swirl Greek Frozen Yogurt Bar
- 1/2 cup frozen pineapple chunks
- 15 semisweet chocolate chips
- 1 tbs sweetened flaked coconut
- 2 tbs raw, shelled pistachios
Directions: Place banana, mango, milk, frozen yogurt bar, and frozen pineapple in blender. Blend until smooth. Add about 10 chocolate chips and blend for an additional 8-10 seconds.
Pour smoothie into desired glass. Top with remaining chocolate chips, coconut flakes, and pistachios.
Now you’re ready to take a sip of paradise!
