I call this granola “rockin'” because it does rock: how can you go wrong with crunchy pumpkin-flavored granola, sweetened with pure maple syrup and emblazoned with pepitas, dried fruit and naughty little peanut butter candies? I made this granola around Halloween time, and I maintain it is definitely a great healthy snack to munch on as an alternative to all that sugary candy. Honestly, one of the scariest things about Halloween is all the crazy ingredients hidden inside most candy wrappers!

Rockin’ Pumpkin Granola
Makes about 2 1/2 cups
- 1 cup old-fashioned oats
- 1/4 cup pepitas (pumpkin seeds)
- 1/8 tsp salt
- dash cinnamon
- pinch nutmeg
- 3 tbls organic maple syrup
- 3 tbls Libby’s Pure Pumpkin puree
- 1 tsp pure vanilla extract
- 1/4 cup dried cranberries
- 1/4 cup golden raisins
- 3 tbls Reece’s peanut butter chips
Preheat oven to 350 Fahrenheit. Line a cookie sheet with aluminum foil. Spray foil with nonstick cooking spray.
In a large bowl, combine oats, pepitas, salt, cinnamon, and nutmeg.
In a saucepan, combine maple and pumpkin puree. Heat to low. Mix constantly. When bubbles form, remove from heat. Pour over oat mixture. Add vanilla. Stir until oat mixture is completely coated.
Pour oats evenly over prepared baking sheet. Spread thinly.
Bake 15-18 minutes, removing every 8 minutes or so to stir.
Remove from oven. Add cranberries, raisins, and Reece’s peanut butter chips. Mix.
