This is a no-cook, no fuss recipe for a convenient lunch for one. Just spread the tomato sauce on the tortillas, top with the cheese and veggies, and you’re ready to roll! Feel free to customize with different types of veggies. I used avocado for healthy fats and a sweet mini pepper for vitamin C. But I can see lots of different types of veggies tasting great in this simple recipe.
Easy Enchilada Tacos for One
- 2 personal-sized corn tortillas
- 2 tbls red pasta sauce
- 1 slice Sargento brand Colby-Pepper Jack cheese
- 1/4 of an avocado, sliced
- 1 sweet mini pepper, chopped into little tiny bits
Spread red sauce on the tortillas. Rip the slice of cheese in half and place one half on one side each tortilla. On top of the cheese, add the avocado slices and the mini pepper pieces. Fold each tortilla over. Warm in the microwave. Serve warm.
