Egg and Cheese Tortilla Wrap

This is barely even a recipe; it’s kind of obvious how to make this. It’s more of a concept, in case someone like my Mom’s sister (who alway uses the same smoothie recipe!) hadn’t come up with this quesadilla before and thinks it’s a neat idea.

Egg And Cheese Tortilla Wrap

Makes: 1 serving


  • 2 eggs
  • 1 slice pepper jack cheese
  • 2 personal – size yellow corn tortillas
  • marinara sauce to taste


Warm tortillas in microwave until warm. Spread with marinara sauce.

Spray a small pan with cooking spray.

Crack eggs into a small bowl. Discard shells, beat eggs vigorously with a fork.

Pour eggs onto pan on medium heat. Cook eggs, moving them constantly with a spatula to scramble them. When it starts to look like scrambled eggs,put the cheese on top. Keep pushing the eggs around the pan with a spatula, making sure the cheese stays on them. If you like, flip the eggs over so the cheese is on the bottom and gets even more melty.

When the eggs look done, the cheese is sort of melty, and the whole thing is sizzling, use the spatula to lift the eggs and plop them on top of the tortillas as shown:

Now, fold the tortillas around the eggs so they sort of wrap up the eggs with no way for the eggs to slide out. You know, the same way you’d make a burrito.

The next step is simple: eat it!
