Sometimes, things don’t work out the way you expected them to. For instance, today I set out to make a flatbread pizza with tomato sauce and cheese, just as simple as could be. But the tomato sauce we had in the fridge was expired. And it was getting to late to go out and buy more. In fact, it was too late to even turn on the oven and let it preheat. I just wanted to get on with it.
So I replaced the tomato sauce with hummus. I was going to add Tofurkey in leu of pepperoni, but we had none (SOMEBODY used up the box and didn’t throw out the empty package so it looked like we still had some in the fridge.) No worries, I just subbed in Morning Star brand veggie bacon.
Instead of waiting around for the oven to preheat, I made this pizza in the microwave. It still tasted great, though I admit baking it in the oven makes it get more crispy around the edges.
Things worked out totally differently from how I’d planned with this pizza. And that was actually a good thing. Hummus, Italian cheese, and veggie bacon may sound like a random combination, but they actually tasted amazing together! Enjoy this healthy, easy personal pizza.
Hummus & Veggie Bacon Personal Flatbread Pizza
makes one large personal pizza
- 1 Flat Out flatbread (I used Light Italian flavor, but the original flavor would work just as well)
- 2 tbls roasted red pepper hummus
- 1/4 cup Sargento shredded 4-cheese Italian cheese
- 2 strips Morning Star brand vegetarian bacon
Spread hummus on Flat Out flatbread, avoiding just the edges. Sprinkle cheese over hummus.
Microwave veggie bacon for 30 seconds. Tear it into smaller pieces and distribute over hummus and cheese.
Microwave pizza for around 45 seconds or until cheese is nice and melted.
