My dad likes to make impulse buys at the grocery store – he’ll see some random thing that claims to be high-protein or has a funny cartoon on the packaging, and throw it in the cart and buy it without any real thought process about how we’re ever going to use it. Some of this stuff never ends up getting used, such as the Twinkies he snags incessantly because they remind him of his childhood.
However, some of the random items he picks out can coincidentally turn out to be healthy and great-tasting. One example of this is the Tofurkey slices he recently found. Once he and I tried them once, we became regular patrons of the Tofurkey company: I personally like Tofurkey better than real turkey! The whole family also likes Dave’s Killer Bread, which he originally grabbed at the grocery store because the packaging has an illustration of a buff man playing a guitar and some slices of bread playing cards. It turns out, Dave’s Killer bread is extremely healthy, high in nutrients, and is produced by a changed man – he used to be a drug addict and in jail, but now plays guitar and makes organic bread with no animal products.
In this recipe, I have combined the aforementioned two of my Dad’s impulse buys into one sandwich. The result is a great-tasting, healthy meal anyone can make at home in five minutes. (Actually, if you’re opening the package of Tofurkey for the first time to make this sandwich, it’ll take longer than five minutes. That package is tough!:) )
Tofurkey Pesto Tomato Sandwich
Makes 1 sandwich
- 2 slices Dave’s Killer Bread with 21 whole grains (or any other whole grain bread of your choice)
- 4 slices “oven roasted” Tofurkey
- 2 tbsps Buitoni’s All Natural pesto with basil
- tomato slices to taste
I assume most people probably know how to make a sandwich, but I’ll briefly explain it. Spread pesto on both slices of bread. Layer on Tofurkey slices to cover one slice of bread, and top with a few tomato slices and the remaining piece of bread. Microwave until warm.
