Seven Selfish Days – Day One: Single Serve White Chocolate Cherry Cheesecake Cookie
Single serve recipes are one of the trendiest things in the food blog world right now. You’re simply not with the times unless you post several cute little mug cakes, cookies for one, etcetera. And I have to admit, single serve recipes sure are convenient. Many of the things I make serve only one person, since I’m the one in my family with the most eclectic taste in food. Especially desserts! Most people in my family won’t eat it unless it’s chocolate-chocolate-chocolate, which I find SO boring! I like to make things just for myself with the most interesting flavor combos I can think of.
Another good thing about single serve recipes is that you don’t have to worry about having a bunch of leftovers lying around, cluttering up the kitchen and getting stale. If you’re interested in health, you really don’t care to have a huge batch of cookies waiting to be eaten. Besides, I like to try different combos of flavors anyway, so I like to just try something once and not have to eat it over and over again until it’s used up and I can make something new.
So single serving recipes are definitely useful. Especially for me this weekend: I’ve been itching to bake all week, but I woke up this morning with a sore throat. Yuck. Obviously it wouldn’t be a very good idea for me to make a big batch of baked goods for everyone, kneading my germs into the dough. But I still wanted to make something yummy, so I settled for this single-serve, no-fuss microwave cookie. It was delicious. But my family can’t vouch for that, because unfortunately I did not make enough for them to share. And this bowl of soft, warm cookie was all mine. No extra spoons poking their way into my bowl! Aren’t sick days fun? It’s fun sometimes to be selfish.
So I have decided to challenge myself to post every day for seven days. This week’s posts will be focused on being as selfish as possible… via single-serve treats! (Don’t worry, I will not act extra selfishly in general. Just in this one area.)
And what better way to kick off a week of treats for one person, than this super-easy microwave cookie? It had a wonderfully soft texture, with melty white chocolate, sweet cherries, and creamy cheese for a fun burst of flavor. The actual cookie was not too sweet. I thought it tasted fine, but if you prefer a really sweet cookie I recommend adding just a bit more sugar, or perhaps agave syrup or honey. I topped my cookie with a fresh cherry so it just screamed “cute dessert only for me!”

Single Serve White Chocolate Cherry Cheesecake Cookie
Based on this recipe from Healthy Food For Living
Ingredients:
- 1/2 tbl Earth Balance Original Buttery Spread
- 1 Laughing Cow cheese triangle, classic cream cheese flavor
- 1 tbl brown sugar
- 1 tbl Egg Beaters original egg substitute
- 1/4 tsp vanilla extract (or a little more for a sweeter cookie)
- 2 1/2 tbls whole wheat flour
- 1/8 tsp baking soda
- pinch salt (I used about 1/8 tsp)
- 3-4 fresh cherries (cut a couple up into several pieces and remove pits, if desired reserve one for topping)
- 16 white chocolate chips
Directions:
In a small microwave-safe bowl, combine Earth Balance, cream cheese and sugar. Blend gently with a spoon. Add the Egg Beaters and vanilla and mix. Now add the flour, baking soda, and salt. Mix thoroughly. Stir in white chocolate chips and cherry pieces.
Microwave for 35-40 seconds. (I did 55 but I could have gone with a little less.) Remove from microwave and let cool for about ten seconds before serving…yourself!
