Cheddar Swiss Apple Quesadilla

I try not to post too many obvious recipes on this blog (example: “banana chocolate chip bread” or “mixed berry smoothies” are too common for me to bother with.) I usually try to come up with something a little more creative and think outside the box. This recipe is kind of ordinary; I guess lots of people throughout the ages have combined apples and cheese. But hey, it’s a killer combination! So why not celebrate it, even though it may not shake the earth or start a new internet trend. This is a healthy recipe for breakfast, lunch, or anytime you need an apple/cheese/tortilla treat.

Cheddar Swiss Apple Quesadilla

makes 1

cheddar swiss apple quesadilla

Ingredients:

  • 2 personal-sized corn tortillas
  • 1 slice cheddar cheese
  • 1 slice Swiss cheese
  • a little less than half a Granny Smith apple, sliced
  • 1 tbs Earth Balance original buttery spread

Directions:

Spray a nonstick pan with cooking spray. Heat medium-high and place the Earth Balance on the pan. When it melts, place one tortilla on top and layer the cheese and apple slices on top of the tortilla. Top with the remaining tortilla. Flip over to cook both sides.

Remove from heat and enjoy a fun way to consume this classic flavor combo!
