While fads like chia and kale seem to fluctuate in and out of style, spinach is eternally unpopular, and the “hip” foodies wouldn’t be caught dead with spinach in their cart as opposed to the newest fashionable ingredient. And yet, spinach is really extremely nourishing. Lower-calorie than kale, and with a lot more iron, spinach should be a staple in any healthy diet, regardless of passing trends. The thing about spinach is, it’s kind of boring all by itself. So try it in this healthy low-calorie salad with fruity dressing, flavorful pomegranate, tasty Bleu cheese, nutritious almond slices, and featuring a delicious Gardein brand seven grain crispy meatless tender. A yummy way to sneak some spinach into your diet!
Fruity Spinach Gardein Salad
serves 1
Ingredients:
- 2 cups fresh, washed baby spinach
- 1/2 cup pomegranate arils
- 2 tbls Bleu cheese
- 1-2 tbls sliced almonds
- 1 piece gardein brand seven grain crispy tender
- 1 tbl Strawberry Balsamic
Directions:
Cook the crispy tender according to directions on package. Meanwhile, assemble the spinach, pomegranate arils, Bleu cheese, and sliced almonds in a bowl. When chick’n cutlet is done cooking, place on top of other ingredients. Drizzle everything with strawberry balsamic. Serve immediately.
